Winter Colds

Hi friends! I’m sorry this post is a few days late this week, its been a busy few days AND on top of that I’ve been sick. The whole household came down with a cold one after the other and now its my turn… 🙁 I’m literally sitting at my desk wearing two sweaters, my big dressing gown, fuzzy socks, ugg boots and a scarf writing this. Lol. hoping to recover quickly!!

Anyways, so these past few days I’ve only been craving warm soup so I thought it’d be a good time to share with you one of my favourite soup recipes: bell peppers & tomato soup. Its. The. Best.

Let’s jump right into this recipe.

For 4 portions you’ll need:

  • 3 red peppers & 3 orange or yellow peppers
  • 3 large tomatoes (I only had small-ish ones so grabbed 6)
  • 1 red onion (same here, I only had small ones so used 1 and a half)
  • 1 red chilli pepper
  • 4 sprigs of thyme (edit: I only had rosemary so I used that instead but the recipe calls for thyme, just to clear up any confusion!)
  • 1 tablespoon of curry powder
  • 600mL of vegetable stock
  • olive oil, salt & pepper

First chop your bell peppers, removing the seeds and sauté them in a pan until slightly golden.

While your peppers are on the stove, plunge your tomatoes in boiling water for about 5-10 seconds, then immediately chill them in cold water.

Once they are cool, cut them and peel the skin off (P.S. its easier than it sounds, trust me on that one!).

Make sure your peppers aren’t burning by then! Place them on the side while you chop your onion and red chilli pepper (finely!). Then grab a large casserole, place on the hob on medium heat, pour a little olive oil and add the onion and chilli pepper.

Fry them for 2-3 minutes then add your peppers, tomatoes, 3/4 of the thyme and curry powder to the mix and cook for 4 to 5 minutes longer.

Then add the stock. Place the lid on and continue to cook for about 30 minutes.

Once 30 minutes have gone by, take the sprigs of thyme out and blend the rest until smooth. Season with salt and pepper according to taste, a little thyme for decoration (or rosemary in my case. lol.) and serve!!
